Happy beginning of Summer 2012! I’ve been too busy working and socializing to do much cooking or baking lately. But of course, that doesn’t mean I haven’t been thinking about food (as usual).
It’s been hot, muggy, and stormy in Minnesota this week. This weather makes it nearly impossible to cook indoors or even on the grill. I’m putting my slow cooker to use today and making Slow Cooker Cilantro Lime Chicken. I found the recipe on Pinterest and it’s awesome! Top a plate full of greens with the chicken and sliced avocados. . .delicious.
A friend recently reminded me of my mom’s Nutty Cabbage Salad. A perfect BBQ side dish.
I’ve got an abundance of blueberries to use in my fridge. Blueberry Raspberry Tart is on my mind for the upcoming July 4th holiday celebration. Or perhaps, these Lemon Blueberry Cheesecake Bars, which were a big hit at an event I did a few months ago.
Speaking of socializing, I got an invitation to visit the new Chef Shack kitchen on 42nd/Bryant in south Minneapolis on Monday. I’ve written about Chef Shack before. Carrie Summer and Lisa Carlson, pioneers in the Minneapolis food truck scene, continue to amaze and inspire me with their commitment to our food community. And they love what they do! There’s plenty of new food truck businesses on the streets of Minneapolis that Carrie and Lisa have embraced and mentored. These ladies have got the system down. And the food is fantastic. Get in on those famous Indian Spiced donuts before summer is over.
