Harvey Wallbanger Cake

I love this cake.  It has sentimental value.  As a kid, my mom made it for dessert when we had dinner parties at our house.  Yeah, it has cake mix in it. . .and pudding mix.  So what.  Just go with it.

I decided to make Harvey Wallbanger Bundt Cake as our dessert for a dinner party we had at our house last weekend.  Everyone loved it.  They asked for the recipe.  So here it is.  It tasted even better the next day.

Harvey Wallbanger Cake

1 pkg. yellow cake mix (I used Betty Crocker)

1 pkg. instant vanilla pudding

1/2 cup canola or vegetable oil

4 large eggs

1/4 cup vodka

1/4 cup Galliano liquer

3/4 cup orange juice

Glaze:

1 Tbsp. unsalted butter

1 cup powdered sugar

2-3 Tbsp. orange juice

Directions:

Preheat oven to 350 degrees.  Grease and flour bundt pan.

In a large mixing bowl, mix beat the cake mix, pudding mix, oil, eggs, vodka, Galliano, and orange juice for 4 minutes.

Pour cake mix in bundt pan and bake for 45-50 minutes until toothpick inserted in center comes out clean.

Cool cake in pan, then invert on to cake plate.  Top cake with glaze.

Serve cake with a scoop of vanilla ice cream before devouring.

I always LOVE desserts with cake mix in them….pudding makes it even better!
