Brittlebush Brunch

We went to Vail, CO last week for a much needed get-away celebration with friends.  Friends came from ND, MN, NY, and CO.   We woke up to Brittlebush Brunch on the first morning and quickly learned that Molly (who lives in Brooklyn, NY) is one awesome cook in the kitchen.  I’ve never had an egg dish quite like this.  I took one picture with my phone before devouring the entire plate of food (please excuse my massive amount of fruit salad).  This dish was the perfect way to start out a day on the slopes.  Lucky for us, Molly was kind enough to share her recipe!

Brittlebush Brunch

1/ 4 cup butter

1/ 4 cup flour

1 cup light sour cream

1 cup skim milk

1/ 4 tsp chopped fresh thyme

1/ 4 tsp chopped chives

1/ 4 tsp chopped sweet basil

1/ 4 cup chopped fresh parsley

2 cups shreddered cheddar cheese

18 hard boiled eggs – sliced

1lb.  bacon, cooked  and crumbled

1 cup seasoned stuffing mix (Stovetop)

In a medium saucepan, melt butter and slowly blend in the flour.  Stir for 2 minutes until cooked and slightly thickened.  Add sour cream and milk: blend well.  Add fresh herbs and cheese.  Cook on low heat until the cheese has melted.  Arrange sliced eggs and bacon in a 9 x 13 casserole.  Pour sauce over the top and sprinkle with stuffing mix.  Bake at 350 for 25 minutes.
Serve with fresh fruit salad and impress your friends.  I can’t wait to make this at my house!
