Ground Turkey and Black Bean Tacos

I’ve been slacking in the kitchen this last week. . .for good reasons.  We traveled to New York and Massachusetts over Labor Day weekend for my girlfriend, Mia’s, wedding.  Best wedding ever.  Once we got home, I dove into getting our house ready for a rummage sale.  Needless to say, dinners have been quick and simple this week.  This recipe is an adaptation of a recipe from from my friend, Cara Lemmage.   I vary the ingredients depending on what is in my refrigerator.

 

Ground Turkey and Black Bean Tacos

1 lb. lean ground turkey

1 yellow pepper, chopped

1 can black or pinto beans, drained

1 packet of taco mix (I swear by Bearitos which you can get at Whole Foods, co-ops, or in some grocery store’s organic section)

8-10 corn tortillas, warmed

Mexican shredded cheese, feta cheese, or cotija cheese

Shredded lettuce, spinach, or sprouts

Light sour cream

Guacamole

Salsa (of your choice)

Directions:

Cook ground turkey in saute pan until no longer pink.  Drain and add yellow pepper and beans.  Cook on medium heat until peppers are heated thoroughly.   Turn heat down to low and add taco seasoning packet, along with 2/3 cup water (or measurement according to packet).  Heat mixture for another 8 minutes, stirring frequently. Once done, top corn tortillas with mixture, cheese, lettuce, sour cream, guacamole, and salsa.

This recipe makes a large portion and freezes well for leftovers.
