Hoisin Grilled Pork Chops with Grilled Vegetables and Heirloom Tomatoes

One night last week, we decided to have an impromptu grill-out after discovering pork chops in our fridge.   We threw a little sauce on top of the chops, cut up the vegetables we had on hand,  and that was dinner.  Summer food allows for that sort of thing.  I love it.

Hoisin Grilled Pork Chops

3-4 pork chops (with or without bone), washed and dried with paper towel

2 heaping Tbsp. Hoisin sauce

1/4 tsp. cumin

1/4 tsp. cayenne

Assortment of vegetables (asparagus, onion, mushrooms, red pepper)

2 Tbsp. olive oil

1 Heirloom tomato

Kosher salt

Black pepper

Fresh Italian parsley

Fresh basil


Cut up vegetables and place in a grill basket.  Mix with olive oil, salt and pepper.

Prepare grill.   Place pork on grill and top with half of sauce.   Grill  about 5-7 minutes on each side.  Flip when cooked 1/2 way through and spread rest of sauce on top of each piece.  Let meat sit for a few minutes before serving.

At the same time, place grill basket on the grill. Stir frequently. Vegetables should be done around the same time as the pork chops. Top vegetables with chopped fresh parsley.

Slice tomato and season with salt, pepper, fresh parsley and basil.
