Nutty Cabbage Salad

My mom is famous for bringing her Nutty Cabbage Salad to bbq parties.  This salad is light, colorful, and compliments whatever kind of meat is on the grill.  It takes just a few minutes to prep and tastes best if marinated overnight.  I brought this salad to our friends’ housewarming bbq party on Friday night. . . in the rain.  And we had a great time!   Good food, drinks, and company.  Jack especially enjoyed toasting marhmallows for s’mores.

Nutty Cabbage Salad

1/2 head of cabbage or a bag of slaw

1/2 green pepper, diced

1/2 red pepper, diced

1/2 cup green onions with tops, sliced

1 small pkg. slivered almonds

1 small pkg. sunflower seeds

1 pkg. of  Ramen Noodles (Chicken flavor)

Dressing:

2 Tbsp. sugar

1/2 cup canola oil

1/2 tsp. Kosher salt

1/2 tsp. ground black pepper

2 Tbsp.  apple cider vinegar

Seasoning from the Ramen Noodle pkg.

Mix the dressing with the cabbage, green pepper, red pepper and green onions.  Let the mixture set overnight or for several hours.  Add the remaining ingredients (almonds, seeds, and crushed ramen noodles) right before serving.
