Spinach Salad with Bacon and Eggs

My very close girlfriend, Mia, is getting married in September. She and 2 other girlfriends visited over the weekend for a co-ed bachelorette celebration.  We had a fabulous time.  Very little sleep combined with lots of giggling, eating, drinking, and dancing.  We had a big BBQ bash at our house following an afternoon of Pedal Pubbing.   We made an assortment of appetizers, brie sliders, grass-fed beef hot dogs, salads, and cupcakes from Sweet Retreat.  My mom’s recipe for Spinach Salad with Bacon and Eggs was a popular side dish.  Pretty much anything with bacon is appealing to most guests.  We did most of the prepping the day before and assembled the salad while the meat was on the grill.  Big kuddos to my girlfriends, Stacie and Amber, for decorating and helping with the food prep.  Very excited for the big celebration in September!

 

 

Spinach Salad with Bacon and Eggs

1 bag of spinach

1/2 head of romaine lettuce, rinsed and chopped into bite-size pieces

4 hard-boiled eggs, sliced

1/2 red onion, thinly chopped

6-7 pieces of bacon, cut, cooked and drained

2 avocados, diced

1/2 pkg of sliced white button mushrooms

Dressing:

1/2 cup light mayonnaise

1/4 cup sugar

1/4 cup apple cider vinegar

Mix the dressing ingredients ahead of time and refrigerate.  When ready to assemble salad,  arrange the greens in a large bowl and top with the rest of the salad ingredients.  Drizzle the dressing over the salad and mix together before serving.
