Fudge Nut Bars

In celebration of Nurse’s Week,  I’m sharing a recipe from my nurse friend Pace.   She’s from North Dakota (like me).  She’s a potluck pro.  I was in heaven the first time she brought these Fudge Nut Bars to a work potluck.  Chocolate fudgey nut goodness.   I made these for the Open House Party at Bubbly Paws.  They were the first item gone on the table.  The kids especially liked them.  If you have a dog and haven’t been to Bubbly Paws yet, check it out.  It’s the perfect place to take your dog for a wash without getting your house dirty.

Fudge Nut Bars

1 cup unsalted butter

2 cups brown sugar

2 large eggs

2 tsp. vanilla

2 1/2 cup all-purpose flour

1 tsp. baking soda

1 tsp. salt

3 cups oatmeal

1 pkg. semi-sweet chocolate chips

1 cup sweetened condensed milk (use the real stuff)

2 tsp. unsalted butter

2 tsp. vanilla

1 cup of nuts (I use walnuts)

Preheat oven at 350 degrees.

Cream the butter and sugar with a mixer.  Mix in the eggs and vanilla; stir in dry ingredients (through oatmeal).  Set aside while making the filling.

Filling:  Place condensed milk, chocolate chips, butter, and salt in a microwave safe bowl.  Microwave, stirring frequently, until smooth.  Stir in nuts and vanilla.

Spread 2/3 of the dough in the bottom of a greased jelly roll pan.  Cover with the chocolate filling.  Dollop the rest of the dough on top.

Bake the bars for 25-30 minutes.  Cool before serving.
