Dana’s Kale and Feta Salad

A few weeks ago, my friend, Dana, brought this glorious and refreshing Kale and Feta Salad to a party.  I fell in love with it and  had to duplicate it for our neighborhood block party tonight.  It will balance out the all-beef hot dog I’m also planning to eat.  Here’s my best guess at Dana’s measurements for the salad.

Kale and Feta Salad

2 bunches of curly kale, chopped finely

6 oz. package of feta cheese

4Tbsp. olive oil

1/4 tsp. Kosher salt

1/4tsp. ground black pepper

juice from 2 lemons

1 small shallot (about 3 Tbsp.), chopped finely

Mix kale and feta cheese together in a large serving bowl.  Combine the olive oil, salt, pepper, lemon juice, and shallot together in a mason jar or bowl.  Shake until emulsified.  Add the dressing to the kale and feta.  Mix together and marinate in fridge for a couple of hours or overnight.

Easy and healthy!

I can honestly say without the slightest hint of hyperbole that this is the best salad in the history of the world. Seriously, it is good.
