Dark Chocolate and Pecan Blondies

We went to a housewarming party last night.  I brought these Blondies.  Certainly not the healthiest treat; but they were gone by the end of the night.   This recipe is adapted from the Smitten Kitchen recipe for Infinitely Adaptive Blondies.  The original recipe calls for baking the Blondies for 20-25 minutes.  I baked mine for at least 30 minutes, and they were still fairly gooey inside.

Dark Chocolate and Pecan Blondies

8 Tbsp. unsalted butter, melted

1 cup brown sugar

1 large egg

1 tsp. vanilla extract

pinch of salt

1 cup all purpose flour

3/4 cup dark chocolate chips

1/2 cup toasted chopped pecans

Directions:

Preheat oven to 350 degrees.  Spray an 8×8 pan with cooking spray.

Mix melted butter with brown sugar in a mixing bowl.  Beat until smooth.  Beat in egg and then the vanilla.

Add salt and stir in flour.  Mix in dark chocolate chips and toasted pecans with a spatula or wooden spoon.

Pour mixture into pan.  Bake for 25-30 minutes.
