Turkey and Cheddar Burgers with Smoky Aioli

  • We’re in full-on grill mode at our house.  Once the temperature gets anywhere close to 50 degrees, we’re outside and ready to fire up the grill.  We had ground turkey on hand this weekend, and I found the just the perfect turkey burger recipe on Epicurious.  I made the sauce and patties earlier in the day.  We grilled the red pepper and burgers at the same time.  These burgers were certainly a hit with my boys.  The sauce made them very moist and tasty.

    Turkey and Cheddar Burgers with Smoky Aioli

  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 cup light mayonnaise
  • 2 tablespoons extra-virgin olive oil plus additional for brushing red pepper
  • 2 teaspoons fresh lemon juice
  • 1 1/2 teaspoons smoked paprika
  • 1 garlic clove, pressed and cut in half
  • Kosher salt
  • Freshly ground pepper
  • 1 pound ground light meat turkey
  • 1 large red bell pepper, quartered
  • 4 slices cheddar cheese
  • 4 flatbread buns (I used Artisan Flatout flatbread)
  • Arugula

    Toast cumin and coriander in small skillet over medium-high heat until aromatic and slightly darker in color, stirring frequently for about 1 minute. Cool for a few minutes. Whisk  light mayonnaise, 2 tablespoons extra-virgin olive oil, fresh lemon juice, smoked paprika, garlic, and ground spices in small bowl. Season to taste with salt and freshly ground pepper.  Set aside in refrigerator.

    Mix turkey and 2 Tbsp. of the aioli in a medium bowl until combined. Divide the turkey mixture into 4 equal portions and form into patties.  Make a small  indentation in center of each burger.  Season turkey burgers with salt and pepper and set aside.

    Prepare grill.

    Brush red bell pepper pieces with olive oil; sprinkle with salt and  pepper. Grill red bell peppers until soft and charred, about 4 minutes per side.   Remove peppers from grill and cover with foil.

    Grill turkey burgers 5 minutes. Turn over; grill until almost cooked through, about 5 minutes. Top each burger with 1 cheese slice and grill until meat is cooked through and cheese melts, about 1 minute longer.  At the same time, butter one side of flatbread with butter spread of your choice. Grill flatbread for 1 minute.

    Place 1 turkey burger on  flatbread bun.   Top with grilled red pepper pieces, and arugula and extra aioli sauce (if desired).

    Serve burgers with a side of roasted blue potatoes or side dish of your choice.
